Coming to you directly from the Swiss Alps: Spicy chicken wings with Mango salad

My Austrian friend Barbara is not just known for her baking, but also for her ability to serve up simple and incredibly tasty meals. I do believe that Austrian girls are taught to bake, the same way many of us are taught to ride-a-bike. I will be posting some of Barbara’s baking delights from time to time as they are too good not to share.
After a day of high-altitude skiing, one does work up an appetite for a hot and hardy meal. This spicy chicken wing recipe was so simple and delicious - a real crowd pleaser. The kids couldn’t stop eating them! Equally delicious was the mango salad she served along side. Also fantastic served with sticky rice or just a pot of steamed white rice.
Ingredients:
chicken wings (approximately 6 per person)
1 cup of sesame oil
1 bottle of chilli sauce (500ml)
*Note: The quantity of sesame oil and chilli sauce is for the quantity of 50 whole wings (100 wings when cut in half)
Preparation:
First remove the tips of the chicken wings and discard. Cut the chicken wings in half. Twenty-five wings cut in half will serve approximately 5 people. In a bowl combine the chilli sauce and sesame oil. In a deep dish pan place the chicken wings in rows. Generously spoon the chilli sauce mixture over the wings. You might have to vary the amount of sauce you use based on how many chicken wings you will be serving. Bake at 180 degrees Celsius for approximately 25 minutes or until the wings are crispy brown.
Mango salad
Ingredients:
Mixed greens of your choice
1 or 2 ripe tomato, diced and seeds removed
1 large mango peeled and sliced
1 red Chilli pepper, thinly sliced
Peanuts
Fish-sauce (approximately 2 Tablespoons)
Lemon Juice, approximately 1/2 cup
Garlic (2 - 3 cloves)
1 Tablespoon of sugar
Preparation:
In a large serving bowl combine the mixed greens, tomato, mango, chilli pepper and peanuts. In a separate bowl mix (whisk) together the fish sauce, lemon juice, garlic and sugar. Just before serving, pour the dressing over the salad ingredients and toss together
